I had the opportunity to travel a lot when I lived in Berlin and try so many amazing dishes from other cultures—in fact, my favorite thing about travel is eating what locals eat. There was a restaurant that I had heard about in Copenhagen, called Grød. It is a porridge restaurant. They serve sweet and savory porridges all day and I ate there all three days that I was in Copenhagen and bought the cookbook. I know porridge doesn’t sound very sexy or interesting, but trust—these people know their flavors. This recipe is the first one I tried and I had read about it on a bunch of reviews, and ooooo is it so good! So, here I am, sharing it with you, and you are so welcome.
The Porridge
1 1/2 cup rolled oats
1 1/2 cup water
1 1/2 cup milk
dash of salt
Bring the ingredients to a boil over high heat. Bring down to a medium heat when it’s boiling and let it reduce to a nice consistency. Season with salt. (About 7-8 minutes)
Toppings
2-3 Tablespoons dulce de leche
1/3 cup roughly chopped roasted almonds (roast at 400° for about 8 min. or until fragrant)
1 apple, roughly chopped
a few dashes of cinnamon
Top prepared porridge with above ingredients and serve warm. Makes two large servings.
